At Healthy Gourmet, we often like to take American classics that lack the balanced nutrition factor, and tweak them to increase the benefits, and decrease calories. Our Buff-alo tenders are one of these popular items on our menu, here’s how we make it great.

We have substituted processed wheat flour with almond flour, made gut-friendly Greek yogurt ranch that’s better than the original (controversial stuff here). And added our goes-great-on-everything BUFF-alo sauce made from 3 ingredient hot sauce, grass-fed ghee (clarified butter), and coconut aminos, a soy-free soy sauce substitute.

The Recipe

Serves 8-10 (snack tray)

Almond Crusted Tenders

3 lbs chicken breast (cut into strips)

3 Tbs Olive oil

Crust mix:

8 oz Almond flour

1.5 oz Parmesan cheese grated

Sea salt ½ tbs

1 tsp Pepper

½ tsp. Thyme (dried)

½ tsp Oregano (dried)

½ tsp Garlic powder

1 tsp Paprika

Instructions:

In a mixing bowl, coat the cut chicken strips in olive oil and set aside. The olive oil will help the crust stick and crisp in the oven.

Next, add all ingredients for the crust mix together in a mixing bowl.

Working in about 3 batches, toss the 1/3 of the tenders in 1/3 of the almond crust at a time, then lay them out on a sheet pan.

Working in smaller batches is best to keep the crust from clumping if trying to coat all the chicken at once.

Place the tenders on a sheet pan in a 425° F oven for 12-15 minutes, being sure to cook to 165° F internal temperature.

 

BUFF-alo Sauce

24 fl oz Hot Sauce (Franks Red Hot is great)

6 oz Ghee (can be substituted with butter)

6 Tbs Coconut aminos

2.5 Tbs apple cider vinegar

2 tsp garlic powder

Instructions:

Add all ingredients together in a saucepan and bring to a boil. Be sure to whisk the sauce well to incorporate all ingredients. Let the sauce cool and serve.

 

Greek Yogurt Ranch

32 oz Fat-free Greek Yogurt (1 large container)

½ Tbs Sea Salt

2 Tbs Onion Powder

1 Tsp Pepper

1 tsp Dill (dried)

1 tsp Parsley (dried)

2 Tbs Lemon juice

Instructions:

In a large bowl, whisk all ingredients together until the yogurt is smooth. For best results, place the ranch in your fridge for a couple of hours before serving to let all the flavors come together.
