Adobo Chicken
(wt. 13.5oz)The unofficial national dish of the Philippines, adobo is a cooking method using vinegar, garlic, soy sauce and spices. Traditionally mild in spice and tangy, we added a touch of annatto and bay leaves to our recipe. In Spanish, "adobo" refers to the process of marinating meat before cooking. When the Philippines were colonized by the Spanish in the early 1600's, a Spanish Franciscan missionary made the first mention of "adobo de los naturales" or adobo of the native people.
Differing from Spanish adobo, Filipino adobo cooking uses vinegar, soy sauce, garlic, and spices to marinate the meat prior to cooking. Soy sauce was introduced to the islands by Chinese traders prior to Spanish colonization, and adopted into Filipino cooking. The tanginess of the vinegar soaks into the meat to create a unique flavor that has many varieties across the Philippines.

Chicken cacciatore or “pollo cacciatore” is a meal from the Tuscany region of Italy and is a renowned northern Italian dish. The term “cacciatore” literally means "hunter" in Italian. In cuisine, “alla cacciatora” refers to a meal prepared "hunter-style". Our cacciatore is made with braised chicken (“pollo alla cacciatora”) but the original dish was was likely made with rabbit or other wild game dating back to the Renaissance period.
Fun Fact:
We know this Italian favorite as “chicken cacciatore” but it is “alla cacciatora” (female hunter) in Italian named in honor of the hunter’s wife.

Salisbury steak is named after its inventor, Dr. James Henry Salisbury. As a physician, Salisbury was convinced most ailments were preventable through diet and he made it his life's goal to find a diet that one could consume everyday and maintain optimal health.
After several one-food diet attempts, Salisbury determined mincemeat, or hamburger provided a great deal of energy and nutrition with very little digestive effort from the body. He tested his theory on soldiers during the Civil War, and published a book in 1888 with his findings.

Culture Bites
The first written mention of the Bolognese sauce appears in the 1891 culinary manual “La scienza in cucina e l’arte di mangiare bane,” or “The Science of Cooking and How to Eat Well” by Pellegrino Artusi. However, it is believed that the first version of what would become the beloved Ragù alla Bolognese was created in the late 1700s, when the chef to the Cardinal of Imola prepared the first known dish in which a ragù, or meat-based sauce, was served over pasta.
Today, the world knows of Bolognese as a meaty tomato sauce, but in the original recipe found in Artusi’s culinary manual, you won’t find a mention of tomatoes. That aside, the fundamentals of the sauce have changed little. A battuto, or base of vegetables, is gently cooked to create a sofrito, or flavor base, for the sauce. Meat (Artusi recommended veal) is then sautéed in the sofrito with a little bit of wine (red or white) and the sauce is finished with a touch of cream or milk to lend the sauce a rich flavor.
Over the years, the Bolognese sauce has evolved and always includes at least a small amount of tomato, and often garlic and herbs. Versions of this worldwide favorite vary by region and by personal preference. But one thing remains the same: you just can’t beat a delicious Spaghetti Bolognese.
